Three days of harvest—September 19th, 20th, and 21st—following a season that required a great deal of work. After being destemmed and pressed, the grapes ferment spontaneously with indigenous yeasts. Daily punching down helps develop the wine's characteristics, which will be fully developed during oak aging.
