As was common in the 1980s and 1990s, the harvest takes place at the end of September: on the 27th and 28th of the month, the grapes are destemmed, pressed, and then left to ferment spontaneously. They macerate with the skins for a fortnight. Repeated daily punching down of the cap accompanies the process before traditional pressing.
