September 21st is the day dedicated to harvesting the selected varietals. The harvested grapes are so healthy and ready that they bring all the energy of a memorable season to the fermentation stages. Fermentation on the skins in amphorae and subsequent aging transform the grapes' radiant health into a unique wine of great value.
