The vines, restored after the wounds and damage sustained by the late spring frost, are harvested on September 25th and 26th, producing a limited quantity of fruit of remarkable quality. Fermentation and the presence of the skins for six months bring out the harvest's interesting qualities, before the two-year aging process.
