Two days of harvest, September 22nd and 23rd, allow a precious harvest to be stored in Georgian amphorae: the grapes remain there for six months before being removed from their skins and then aged for another six months. It's the perfect time to develop a wine that still retains the sound of the wind from an entire vintage.
