Vitovska 2001
The grapes harvested on September 27th and 28th are left to macerate for seven days. They are then enhanced by identifying the right vessel for the best maturation of the wine. This is the 30-hectoliter Slavonian oak barrel, used for the first time at the Vodopivec winery. Not only is the right time essential for the wine to mature, but so is the right container that cradles it as if it were in a mother's womb. Two years and two months pass before the 2001 vintage is bottled.
